The problem glüf solves
77% of people with coeliac disease have been accidentally exposed to gluten when eating out (Coeliac UK, 2025). The reason is not usually malice — it is inconsistent information. Menus change. Staff turn over. What was safe last month may not be safe now. And most existing sources of gluten-free restaurant information are based on static, unverified, crowd-sourced reviews that cannot keep up.

Step 1: AI generates a baseline safety profile
For every restaurant in the glüf database, our system uses large language model technology to analyse publicly available information — including menus, online reviews, and allergy information — and generate a structured safety profile. This gives every restaurant a baseline rating from day one, without requiring any user input. It means glüf works at national scale immediately, not just in cities where enough users have left reviews.
Step 2: Users leave structured post-visit feedback
After visiting a restaurant, glüf users can leave a structured review rated against four specific criteria that matter most for coeliac safety:
Staff knowledge — Did the staff understand what coeliac disease means? Did they take it seriously? Were they confident answering questions about cross-contamination?
Labelling clarity — Was the gluten-free menu clearly labelled? Was it easy to identify what was safe and what was not?
Gluten-free variety — Was there a meaningful choice of gluten-free options, or just one or two token items?
Taste — Was the gluten-free food actually good? Because safe food should also be enjoyable.
These four criteria form the glüf rating. Each one is weighted and combined into an overall score that reflects the full picture of a coeliac's dining experience.
Step 3: Feedback strengthens the algorithm
Every structured review feeds back into the glüf algorithm, updating and improving the restaurant's safety profile over time. The more visits a restaurant receives from glüf users, the more accurate and reliable its rating becomes. This creates a continuous improvement cycle: more users mean better data, and better data helps more users make safer decisions.
Step 4: Users make informed decisions before they go
Before choosing a restaurant, glüf users can see a clear safety profile, an AI-generated summary of the gluten-free experience, and ratings from other coeliacs in the community. The goal is simple: know before you go.

What glüf does not do
glüf does not guarantee safety. Restaurant kitchens change constantly — menus, staff, suppliers, and procedures all shift. glüf provides the most accurate, up-to-date information it can, but users should always inform restaurant staff of their coeliac diagnosis on arrival, regardless of a restaurant's glüf rating.
